Tips for Cooking With Curry Paste

So, you've gone out and bought the best curry paste money can buy and you're ready to cook an amazing meal. Curry pastes are a fantastically easy way to make delicious meals, but if you really want to get the most out of your curry, here's a few tips to follow. 


Paste vs. Sauce

To the uninitiated, it may seem like curry sauce and curry paste are the same thing but in fact they are quite different. Curry sauces are thicker, starchier and don't contain the same depth and complexity of colour as a paste. Cooking with a paste instead of a sauce will result in more flavourful and authentic dishes.

Too Hot To Handle

If you are a curry newbie, some curry pastes might be too spicy for your taste. The great thing about cooking with curry pastes is that they are customisable and adaptable, so you might want to start using a little less than the recommended amount to ensure the spice levels aren't too high. Alternatively, you can use the full amount and serve your curry with some yoghurt to take the heat down a notch. This is an especially good idea if there are different levels of spice tolerance in your household.

Turn Up The Heat

If you're on the other end of the spectrum and you can't get enough spice in your curries, add some fresh chopped chilli to boost the spice factor.

Release The Flavour

In order to maximise the flavour of your curry paste, cook the paste in some oil over a medium heat for a few minutes before adding other ingredients.

Keep a Curry Spoon

The flavours in a curry paste are very concentrated and they can easily penetrate cooking implements, leaving behind a trace of their flavour and colour. With this in mind, dedicate one wooden spoon to cooking curries to avoid ruining the flavour of other dishes.
