A Guide to Thai Curries

Thailand is a tourist hotspot for adventure seekers from all over the world. Located between Myanmar and Cambodia, this exotic destination offers a diverse range of scenery; including stunning beaches, rainforests, valleys and mountain ranges, as well as a rich culinary heritage encompassing seafood, street food and a broad variety of fruit. As a country with multicultural influences, the culinary traditions of Thailand share many similarities with those of India, Malaysia and China, resulting in a diverse range of colourful and aromatic local curries. Here are our top five picks for the most popular Thai curries.

Panang Curry

A thick, warming and versatile curry, Panang can be made with chicken, beef, seafood or duck. Although the recipe has multiple variations, the traditional Panang incorporates shredded Kaffir lime leaves, fish sauce, creamy coconut milk and roasted peanuts to elevate its texture and flavour. 


Red Curry

Red curry paste is traditionally made from fragrant yet mild red spur chillies with galangal and lemongrass. This dish can be cooked with pork, beef, chicken and scallops and is best served on steaming plate of jasmine rice.


Green Curry

One of the milder curries, green curry has a slightly sweet flavour. In addition to the base spice mix, shrimp paste, basil and palm sugar are added to the dish to balance the flavours. This curry is made with beef, chicken, pork or fish and is a favourite amongst both locals and tourists.  


Massaman Curry

A Southern Thai Curry well known for its spiciness and rich full bodied flavour. Roasted peanuts and tamarind are added to the spice paste along with potatoes to enhance texture and sweetness. The rich flavours of the dish make it well suited for beef and chicken rather than fish.


Fish Curry

An authentic Thai classic, Fish curry is often made using seafood and tofu as well as fish. With a unique blend of fish and shrimp paste, this curry has a distinctive, strong flavour. The addition of coconut cream and kaffir limes complement the savoury core with hints of sweet and sour. This dish is best served on a bed of jasmine rice or soft rice noodles.
