CANTONESE LEMON CHICKEN

Our Cantonese Lemon Chicken recipe is a tasty mix of crunchy chicken pieces and zingy lemon sauce, great for wowing your guests, or for a weeknight dinner. Chicken can easily be substituted for prawns, squid, or calamari, taking your dinner to the next level. Try it today!

Cantonese Lemon Chicken Serves 3

·         1 packet Lemon Chicken Sauce

·         2 tbsp water

·         450 g (1 lb) diced boneless chicken

·         1 egg (beaten)

·         ½ cup (125 g) cornflour

·         Cooking oil for frying

·         3 thinly sliced lemon or lime or spring onions as garnish (optional)

 

1.     Coat chicken pieces with egg.  Put meat and cornflour in plastic bag.  Shake bag to coat meat evenly.

2.     Pan-fry or deep-fry until meat is cooked, set aside.

3.     Mix Sauce with water.  Pour over cooked meat and mix well.  Garnish.

 

Cooking tips:

(a)   Seafood (prawns or squids/calamari) or fish may be used instead of chicken. 

(b)   Suitable as a dip for chicken nuggets, crumbed fish fillets, seafood or spring rolls and also as a dressing for salad.  To make a dip or dressing, mix 1 tbsp water with a packet of Lemon Sauce.

·         1 packet Cantonese Chow Mein Spice Paste

·         3 tbsp vegetable oil

·         200 g (7 oz) dried egg noodles (to soften noodles, follow pack instructions)

·         200 g (7 oz) sliced meat or seafood (prawns, squid/calamari or mussels)

·         100 g (3.5 oz) a combination of shredded cabbage and carrot

·         Thinly sliced spring onions or red chilli strips as garnish

 

1.     Heat oil in a non-stick wok on medium heat.

2.     Add meat or seafood and vegetables; stir-fry 3 minutes.

3.     Add noodles and Spice Paste; stir-fry for 5 minutes or until cooked. Garnish.

                

Cooking tip: For a vegetarian dish, you may use 200 g (7 oz) vegetables of your choice to replace meat or seafood.
